Recipe:Apple Cranberry Cobbler
Low Caloric & Diabetic Friendly Recipe

  • 3 large baking apples, cored
  • 1 Tbsp fresh lemon juice
  • 1 cup fresh whole cranberries or dried cranberries, soaked in water and drained
  • 2/3 cup granulated sugar
  • 2 Tbsp cornstarch
  • 2/3 cup all-purpose flour
  • 1 Tbsp granulated sugar
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup stick margarine, cold
  • 4 Tbsp low-fat (1%) milk
  • 1 egg white
  • 1 tsp granulated sugar

  • Preheat the oven to 375 degrees. Spray an 8 x 8-inch baking pan with nonstick cooking spray.
  • In a medium bowl, combine the apples and lemon juice. Stir in the cranberries, sugar, and cornstarch. Spread in the prepared baking pan.
  • In a medium bowl, whisk in the flour, sugar, baking powder, and salt until blended. Cut in the margarine with a pastry blender or 2 knives until the 2 knives until the mixture resembles coarse crumbs, 2-3 minutes. Stir in the milk until blended. Lightly flour your hands and form the dough in to a ball, then divide in to 9 smaller rounds. Flatten each round and place it on the fruit mixture.
  • With a pastry brush, paint the dough with the egg white, then sprinkle it with the sugar. Bake until the dough turns golden and fruit begins to bubble, about 40 minutes.
