Recipe: Oatmeal Chocolate Chip Cookies
Low Caloric & Diabetic Friendly Recipe


US MED's Diabetic Recipe

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup (1/2 stick) butter, softened
  • 1/2 cup unsweetened applesauce
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 2 1/2 cup quick-cooking or old fashioned rolled oats
  • 1/4 cup miniature semisweet chocolate chips

Preparation:

  • Preheat the oven to 375 degrees. Coat baking sheets with nonstick cooking spray.
  • In a small bowl, combine the flour, baking soda, and salt; set aside.
  • In a large bowl, beat the brown and granulated sugars, the butter, and applesauce until smooth. Beat in the egg whites and vanilla. Gradually beat in the flour mixture until smooth. With a spoon, stir in the oats and chocolate chips.
  • Drop by rounded teaspoonfuls onto the baking sheets 2 to 3 inches apart. Bake for 9 to 11 minutes, or until golden. Cool on the pans for 2 minutes, then remove to a wire rack to cool completely.
