Recipe: Beef Stew
Low Caloric & Diabetic Friendly Recipe

  US MED's Diabetic Recipe 


  • 1 46-oz can tomato juice
  • 3 cups water
  • 2 cubes reduced-sodium beef bouillon
  • 1 lb stew beef, cut in to 1-inch cubes, fat trimmed (may substitute leftover round steak or beef round)
  • 1 large onion, coarsely chopped
  • 2 large carrots, peeled and diced
  • 3 medium potatoes, peeled and cubed
  • 1 tbsp flour dissolved in 1/4 cup cold water

This hearty, filling beef stew uses one of the least expensive cuts of meat and will keep you warm this Winter!

Serving size: 1 cup

Sodium: 440 mg

  • In a 1-gallon pot, combine tomato juice, 3 cups water, bouillon cubes, stew beef, onion, carrots, and potatoes. Cover and bring to a boil over medium-high heat.
  • Decrease heat until stew is at a simmer, and cook for 45 minutes, stirring periodically.
  • Add pepper and flour dissolved in water, stir to combine, then simmer uncovered 15 minutes more.
