Recipe: Marble Brownies
Low Caloric & Diabetic Friendly Recipe


  US MED's Diabetic Recipe 

Brownies:

  • 1/2 cup baby food prunes
  • 1 teaspoon vanilla extract
  • 3 tablespoons non-aromatic olive oil
  • 1/2 cup low-fat buttermilk
  • 1/4 cup egg substitute
  • 1/4 cup brown sugar
  • 1 cup cake flour
  • 1/3 cup dutch processed unsweetened cocoa powder
  • 1/2 cup Splenda Granular
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder

Topping:

  • 4 ounces reduced-fat cream cheese
  • 3/4 cup low-fat vanilla yogurt
  • 1/4 cup egg substitute

 

These rich gooey brownies will satisfy the most enthusiastic chocoholic in your family. The baby food prunes are an easy replacement for part of the fat and blend well with chocolate.

Preparation:

  • To make the topping, beat the cream cheese until smooth. Add the yogurt and egg substitute and mix well. Set aside.
  • Heat the oven to 350°F. Coat a 9 x 13-inch baking pan with cooking spray and flour lightly. Combine prunes, vanilla, oil, buttermilk, egg substitute, and brown sugar in a large bowl.
  • Whisk together the flour, cocoa, splenda granular, salt, baking soda, and baking powder in another mixing bowl. Stir into the wet ingredients.
  • Spread a generous 3/4 of the batter into the prepared pan and smooth into the corners. Spread the cream cheese mixture on top. Drop the rest of the chocolate batter on the filling in six blobs. Swirl the chocolate into the topping with a knife. Don't go through the bottom layer.
  • Bake 25 minutes or until the topping is firm. Cool completely and cut into 20 pieces.
